Recipe:
- 2 Persians cucumbers, sliced (you can use 1 regular cucumber too!)
- 1 can of sliced beets, drained and rinsed
- 1 can of corn, drained and rinsed
- 1 head of romaine lettuce, Chopped
- 2 medium tomatoes, sliced
- 1 can of black olives, drained and rinsed
- 1 avocado, sliced
For the dressing:
- 3 Tablespoons of apple cider vinegar
- 4 Tablespoons of good Olive oil
- Salt and Pepper to taste
- one medium onion, Finely sliced
Preparation: For the dressing, whisk the vinegar, the olive oil, salt and pepper. Add the onions and let it sit for about 15 minutes before serving. The onions will absorb the dressing. For the salad, Mix all the vegetables in a big bowl. Add the dressing and enjoy
