After a long weekend and a LOT of Grilling, We had leftover chicken that I was not going to throw away. ( I REPEAT, I WAS NOT GOING TO THROW AWAY!) but, What could I make? Well, something very simple. Grilled Chicken Caesar Salad. I had most of the ingredients at home and I’m pretty sure you do too…Here is the recipe.
Ingredients:
- 1 pound of chicken or about 2 chicken breasts.
- 1 head of Romaine lettuce, chopped into small pieces
- 1/2 a cup of good creamy-style Caesar dressing
- 1/2 a cup of Shaved or grated Parmesan Cheese for serving
- Croutons for serving
- Banana pepper or any pickled pepper for serving
Preparation: If you are using previously cooked chicken, reheat the chicken in skillet for about 5 minutes or until warm (Remember it’s already cooked) and slice. Chop the lettuce an transfer to a bowl. Add the chicken, parmesan cheese and toss with the dressing. Top with the croutons and a couple of peppers…enjoy!

- 1 libra de pollo o unos 2 pechugas de pollo.
- 1 cabeza de lechuga romana picada en trozos pequeños
- 1/2 taza de aderezo César, cremozo
- 1/2 taza de queso parmesano rallado para servir
- crutones para servir
- cualquier pimiento encurtido para servir
Preparación: Si está utilizando el pollo previamente cocido, recalentar el pollo en la sartén durante unos 5 minutos o hasta que esté caliente (Recuerde que ya está cosido) y cortar en rodajas. Picar la lechuga y transfiera a un tazón. Agregue el pollo, el queso parmesano y mezcle con el aderezo. Cubra con los crutones y un par de pimientos … ¡disfrute!
