- 6 medium Eastern Potatoes
- 3 Tablespoon of good Olive Oil
- 1 Teaspoon of minced fresh rosemary leaves
- Salt and pepper to taste
Directions: Preheat the oven to 400 degrees.
Scrub and wash the potatoes really good. Cut the potatoes in half lengthwise, then cut each half in wedges, about 1/2 an inch thick. Place the potatoes on a sheet pan with the olive oil, rosemary, salt and pepper. Toss, make sure the potatoes are covered with the olive oil . Spread the potatoes in one single layer. Baked for 30 to 35 minutes turning to the other side after the first 15 minutes. Baked until lightly browned, crisp on the outside and tender inside.
